I already shared my take on Crispix Party Mix, while making that I also made some Tomato Feta Salsa. WARNING This little beauty is addicting! Originally I found this recipe over at Smitten Kitchen and have modified it to my liking. Be careful checking out their site, it can be hazardous to your waistline.
These three superstars (sun dried tomatoes, feta cheese & black olives) have no idea but they are about to become the best of friends, if you have these three you can spice this dish up any way you like. Kalamata olives could also be used but I prefer pre-sliced black olives.

First to take center-cutting-board is the package of sun-dried tomatoes, dice them into itty bitty pieces. Be sure to use a sharp knife because they can be almost rubbery when cutting.
Do the same and cube the feta, I use about a pound of feta because it’s my favorite ingredient in the dish. I had to use the prepackaged stuff though I prefer to use a hunk from the deli counter if they have it in.
Now for the good part, where everyone gets to meet for the first time! Drain the water off the olives and toss in a bowl, add diced feta and tomatoes. YUMMMM!!!
Dice a shallot or onion to place in the mix. I ran mine through a garlic smasher so that the flavor was more evenly distributed and because I’m not a very good dicer. Besides nobody likes biting into a hunk of a member of the onion family…. now a hunk of feta on the other hand. Oh Yeah!!
This next step is when you can really get wild and CRAZY!! I chose to use some dried dill, chives and parsley but you can use anything you have in your spice rack. Seriously! Chili pepper flakes, curry, rosemary…. the possibilities are endless.
I received this next gem as a Christmas gift and I have to admit I have an addiction, it is called Garlic Expressions and can be found at the deli counter of Kroger’s. I like to use it to give steamed veggies a drizzle, marinate chicken and I found that it makes this dip really happy. I add about a 1/4 cup and about 1/4 cup of olive oil.
Here’s my finished product, I think it’s best if you can let this set in the refrigerator for at least 8 hours to let the herbs get acquainted then serve with your favorite crackers or toast. It’s even better if you can let it set for two days and then finish it off with some Tricuits while watching the Buckeyes play in the Rose Bowl. GO BUCKS!!!

Mmmmm feta! This is a great recipe. You can not go wrong with these ingredients. This is great with Simply Naked Pita Chips too. And thanks for the heads up on the garlic expressions. I have not used it before but will definitely look for it now.
